AVOCADO & SUNDRIED TOMATO BAGUETTES

Crusty baguettes filled with creamy avocado, sun-dried tomatoes, and arugula, lightly drizzled with a lavender balsamic reduction. A baguette that's ready to take on the world.

Avocado & Sundried Tomato Baguettes

Cook Time: 30 minutes

Serves: 4 guests

Ingredients:

• 4 mini baguettes
• 2 ripe avocados
• 1/2 cup sundried tomatoes, chopped
• 2 cups arugula
• For the Lavender Balsamic Reduction:
• 1 cup balsamic vinegar
• 2 tbsp honey
• 1 tsp dried lavender into strips)

  • 2 tablespoons all-purpose flour mixed with water
    (for sealing)
  • Olive Oil (or oil of choice), for deep frying

Instructions:

1. Prepare the Lavender Balsamic Reduction:

> In a small saucepan, combine balsamic vinegar, honey, and dried lavender.

> Bring to a simmer over medium heat and reduce by half, about 10-15 minutes. Strain to remove lavender and let cool.

2. Assemble the Baguettes

> Slice the baguettes lengthwise but not all the way through. Mash the avocados and spread evenly inside each baguette.

3. Add the Fillings

> Layer the sundried tomatoes and arugula on top of the mashed avocado.

4. Drizzle

> Lightly drizzle the inside of each baguette with the lavender balsamic reduction.

5. Serving

> Cut into portions and serve immediately, or wrap them up for a delightful picnic treat.
