Chilled Pea & Mint Soup

A refreshing blend of sweet garden peas and mint, served cold with a swirl of coconut cream and a sprig of mint for garnish.

Chilled Pea & Mint Soup

Prep Time: 10 minutes (plus chilling time)

Serves: 4 guests

Ingredients:

  • Fresh or frozen peas - 2 cups
  • Fresh mint leaves - 1/4 cup, plus
    more for garnish
  • Vegetable broth - 2 cups
  • Coconut cream - 1/4 cup, plus
    more for serving
  • Salt and pepper to taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Instructions:

1. Cook the Peas

> If using fresh peas, blanch them in boiling water for 3 minutes, then drain. If using frozen, simply thaw.

2. Blend the Soup

> In a blender, combine the peas, mint leaves, vegetable broth, coconut cream, salt, pepper, olive oil, and lemon juice. Blend until smooth.

3. Chill

> Transfer the soup to a container and chill in the refrigerator for at least 2 hours, or until cold.

4. Serve:

> Pour the chilled soup into bowls. Swirl a dollop of coconut cream on top and garnish with a sprig of fresh mint.
