For the Aloo Gobi Mixture:
• 1 large cauliflower, cut into florets
• 2 large potatoes, peeled and diced
• 2 tablespoons oil
• 1 teaspoon cumin seeds
• 1 medium onion, finely chopped
• 2 cloves garlic, minced
• 1 inch ginger, grated
• 1 teaspoon turmeric powder
• 1 teaspoon coriander powder
• 1/2 teaspoon garam masala
• 1/2 teaspoon chili powder (adjust to taste)
• Salt to taste
• 1/2 cup peas (frozen or fresh)
• 2 tablespoons tomato paste
• 1/2 cup water
For the Mashed Potato Topping:
• 4 large potatoes, peeled and quartered
• 1/4 cup milk (or a vegan alternative)
• 2 tablespoons butter (or vegan butter)
• Salt and pepper to taste
• A pinch of nutmeg (optional)
For Garnish:
• Fresh coriander leaves, chopped
• Almond flakes (optional)
Instructions:
1. Prepare the Aloo Gobi Mixture
> Heat oil in a large pan. Add cumin seeds and let them sizzle.
> Add the onions and sauté until translucent. Mix in garlic and ginger, cooking until fragrant.
> Stir in the spices (turmeric, coriander, garam masala, chili powder, and salt). Cook for a minute.
> Add cauliflower and potatoes, mixing well to coat with the spices. Cook for about 5 minutes.
> Mix in the tomato paste and water. Cover and simmer until the vegetables are tender but not mushy, about 15-20 minutes. Stir in peas and cook for another 5 minutes. Adjust seasoning as needed.
2. Prepare the Mashed Potato Topping
> Boil the potatoes in salted water until tender. Drain well.
> Return potatoes to the pot. Add milk, butter, salt, pepper, and nutmeg. Mash until smooth and creamy.
3. Assemble the Pie:
> Preheat your oven to 375°F (190°C).
> Spread the aloo gobi mixture in an even layer in a baking dish.
> Spoon the mashed potatoes over the top and spread out with a fork to make a textured surface.
> Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
