HERB LEMONADE CHICKEN SKEWERS RECIPE

Recipe:
Ingredients:
• 4 large chicken breasts, cut into cubes
• 1 cup homemade or store-bought lemonade
• 1/4 cup olive oil
• 4 cloves of garlic, minced
• 1 tablespoon fresh thyme, finely chopped
• 1 tablespoon fresh rosemary, finely chopped
• Zest of 1 lemon
• Salt and freshly ground black pepper, to taste
• Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes prior to use)
Summer Salad Ingredients:
• 4 cups mixed salad greens
• 1/2 cup cherry tomatoes, halved
• 1/4 cup red onion, thinly sliced
• 1 cucumber, sliced
Citrusy Herb Vinaigrette Ingredients:
• 1/4 cup extra virgin olive oil
• 2 tablespoons fresh lemon juice
• 1 teaspoon Dijon mustard
• 1 teaspoon honey (optional for sweetness)
• 1 tablespoon chopped mixed herbs (thyme, rosemary)
• Salt and pepper, to taste

Marinade Preparation
> In a bowl, whisk together lemonade, olive oil, garlic, thyme, rosemary, and lemon zest. Season with salt and pepper.
> Place chicken cubes in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal or cover and refrigerate for at least 2 hours, or preferably overnight.

Cooking Instructions
