Instructions:

1. Prep the Vegetable Mix

> In a large bowl, combine the mashed potatoes and mashed root vegetables. Add curry powder, salt, and pepper. Mix well to ensure the spices are evenly distributed throughout the mash.

2. Sauté Aromatics

> Heat the olive oil in a large skillet over medium heat.

> Add the chopped onion and garlic, sautéing until they are soft and translucent, about 5 minutes.

3. Cook the Bubble and Squeak

> Flatten it with a spatula to form a large pancake shape. Allow it to cook undisturbed for about 7-10 minutes, or until the bottom forms a crispy, golden crust.
