STARTER: CORONATION CHICKEN SAMOSA

coronation sauce, encased in crisp samosa pastry.

Coronation Chicken Samosa Recipe

Serves: 4 guests

Ingredients:

For the Coronation Chicken Filling:

  • 2 large chicken breasts
  • 1 tablespoon curry powder
  • ½ cup mayonnaise
  • ¼ cup plain yogurt
  • 2 teaspoons mango chutney
  • 1 teaspoon lemon juice
  • ¼ cup finely chopped dried apricots
  • 2 tablespoons sliced almonds (toasted)
  • Salt and pepper to taste
  • For the Samosas:
  • 8-10 samosa wrappers (or phyllo pastry sheets cut
    into strips)
  • 2 tablespoons all-purpose flour mixed with water
    (for sealing)
  • Olive Oil (or oil of choice), for deep frying

Instructions:

1. Cook the Chicken

> Poach the chicken breasts in simmering water for about 15
minutes or until fully cooked. Allow to cool, then shred into small pieces.

2. Prepare the Coronation Chicken

Filling:

> In a bowl, mix the curry powder, mayonnaise, yogurt, mango chutney, and lemon juice until smooth.

> Add the shredded chicken, chopped apricots, and toasted almonds to the sauce. Mix well. Season with salt and pepper. Chill in the refrigerator for at least 30 minutes to blend the flavors.

3. Assemble the Samosas

> Place a tablespoon of the coronation chicken mixture on one end of a samosa wrapper.
> Fold the wrapper over the filling to form a triangle. Continue folding in a triangular pattern until you reach the end of the wrapper.
> Use the flour-water mixture to seal the edge. Repeat with the remaining filling and wrappers.

4. Fry the Samosas

> Heat oil in a deep fryer or a deep pan to 350°F (175°C).
> Fry the samosas in batches until golden brown and crispy, about 3-4 minutes.
> Remove with a slotted spoon and drain on paper towels.

5. Serving

> Serve the coronation chicken samosas hot, accompanied by extra mango chutney or a mint yogurt dip for a delightful contrast.
