Ingredients:

For Soft-Boiled Eggs:

For Paneer Tikka Coating:

  • 250g paneer, grated
  • 2 tbsp tikka masala paste
  • 1 tsp garam masala
  • Salt, to taste
  • Fresh coriander, chopped (for garnish)

For Breading:

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs

For Frying:

  • Vegetable oil, for deep frying

Instructions:

1. Prepare Soft-Boiled Eggs:

> Bring a pot of water to a boil. Carefully lower the eggs into the water and cook for exactly 6 minutes for a soft-boiled consistency.

> Remove eggs with a slotted spoon and immediately transfer to an ice bath to stop the cooking process.

> Once cooled, gently peel the eggs. Set aside.

2. Make Paneer Tikka Mixture:

> In a mixing bowl, combine the grated paneer, tikka masala paste, garam masala, and a pinch of salt. Mix until well combined.

> Divide the mixture into four equal parts.

3. Wrap Eggs in Paneer Mixture:

> Take one portion of the paneer mixture and flatten it into a disc on your palm.

> Place a soft-boiled egg in the center and gently wrap the paneer around the egg, making sure it is completely covered.

> Repeat with the remaining eggs.

4. Prepare for Breading:

> Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs.

5. Bread the Paneer-Egg Balls

> Roll each paneer-covered egg in flour, dip it in the beaten egg, and then roll it in breadcrumbs until well coated.

6. Fry the Scotch Eggs:

> Heat oil in a deep fryer or a deep pan to 350°F (175°C).

> Fry the Scotch eggs until golden brown and crispy, about 4-5 minutes.

> Remove with a slotted spoon and drain on paper towels.

7. Serving

> Cut the Scotch eggs in half to reveal the soft-boiled center. Garnish with fresh coriander leaves.
