Peach & Lavender Tartlets

Peach& Lavender Tartlets Recipe

Ingredients for Pastry:

  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 cup (1 stick) unsalted butter, cold and diced
  • 2-4 tablespoons ice water

Ingredients for Filling:

  • 4 ripe peaches, peeled and sliced
  • 2 tablespoons sugar, or to taste
  • 1 tablespoon dried culinary lavender
  • 1 teaspoon lemon juice
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten (for egg wash)
  • Additional sugar for sprinkling

Instructions:

1. Pastry Preparation:

> In a large bowl, mix together the flour, salt, and sugar.

> Add the butter and work it in with your fingertips until the mixture resembles coarse crumbs.

> Sprinkle with ice water, 1 tablespoon at a time, mixing with a fork until the dough comes together.

> Form the dough into a disk, wrap it in plastic, and chill for at least 1 hour.

2. Filling Preparation

> In a bowl, gently toss the sliced peaches with sugar, lavender, lemon juice, vanilla extract, and flour. Let sit for about 15 minutes for the flavors to meld.

3. Assembling the Tartlets

> Preheat your oven to 375°F (190°C).

> On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut out circles larger than the diameter of your tartlet pans.

> Press the dough into each tartlet pan and trim the edges.

> Prick the bottom of the dough with a fork to prevent puffing during baking.

> Divide the peach mixture among the tartlet shells.

> Fold over any excess dough onto the filling for a rustic look, and brush with egg wash. Sprinkle with a bit more sugar.

> Bake for 25-30 minutes, or until the pastry is golden brown and the peaches are tender.

4. Serve

> Allow to cool before serving, perhaps with a dollop of whipped cream or a light dusting of powdered sugar.
