DESSERT: PINEAPPLE UPSIDE-DOWN CAKE

PINEAPPLE UPSIDE-DOWN CAKE RECIPE

Ingredients:

For the Topping
• 1/4 cup unsalted butter
• 2/3 cup brown sugar, packed
• 1 can (20 oz) pineapple slices, drained (reserve the juice for the cake)
• Maraschino cherries, to garnish

For the Cake
• 1 1/3 cups all-purpose flour
• 2/3 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, melted
• 2/3 cup reserved pineapple juice
• 2 large eggs
• 1 teaspoon vanilla extract

For Serving
• Vanilla bean ice cream

Instructions:

1. Preheat Oven and Prepare Pan

> Preheat the oven to 350°F (175°C). In a 9-inch round cake pan, melt the 1/4 cup butter in the oven. Sprinkle brown sugar evenly over the melted butter. Arrange pineapple slices on top of the brown sugar, and place a maraschino cherry in the center of each pineapple ring.

2. Mix Dry Ingredients

> In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

3. Add Wet Ingredients

> Stir in the melted butter, pineapple juice, eggs, and vanilla extract until the batter is smooth.

4. Pour Batter Over Pineapple

> Carefully pour the cake batter over the pineapple slices in the cake pan, spreading it evenly with a spatula.

5. Bake

> Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

6. Cool and Invert

> Let the cake cool in the pan for 10 minutes. Then, place a plate over the cake pan and carefully flip it over to invert the cake onto the plate. If any pineapple sticks to the pan, gently remove them and place them back on the cake.

7. Serve

> Slice the pineapple upside-down cake and serve warm or at room temperature with a scoop of vanilla bean ice cream on the side.
