Ingredients:

For the Shrimp
• 24 large shrimp, peeled and deveined (tail on)
• 1 tablespoon olive oil
• Salt and pepper, to taste

For the Avocado Mango Salsa
• 1 ripe mango, diced
• 1 ripe avocado, diced
• 1/2 red onion, finely chopped
• Juice of 1 lime
• 1 tablespoon chopped cilantro
• 1 jalapeño, seeded and minced (adjust to taste)
• Salt and pepper, to taste

Instructions:

1. Prep the Shrimp

> 24 large shrimp, peeled and deveined (tail on)

> 1 tablespoon olive oil

> Salt and pepper, to taste

2. Make the Avocado Mango Salsa

> In a medium mixing bowl, combine diced mango, avocado, red onion, lime juice, chopped cilantro, and minced jalapeño. Gently toss to mix. Season with salt and pepper to taste. Let it sit for about 10 minutes to meld the flavors together.

3. Assemble the Shrimp Cocktail

> Take four martini glasses and spoon a generous amount of avocado mango salsa into each glass.

> Arrange 6 shrimp around the rim of each glass, allowing the tail to hang over the edge for a visually appealing presentation.

4. Serving

> Place the martini glasses on small plates to catch any drips. Offer additional lime wedges on the side for guests who might enjoy a bit more acidity.
